Tis the seafood to be jolly!

Tis the seafood to be jolly! As we hurtle ever closer to that magical time of the year, our thoughts turn to food for the festive season. In many European countries, fish and seafood are traditional at Christmas. With such a superb variety of fish and seafood around the British coasts, there are endless recipes for great Christmas food.

Smoked salmon

Smoked salmon used to be considered a luxury, but lost this accolade when the market was flooded with poor quality supermarket smoked salmon. Today, high-grade smoked salmon is definitely luxurious and is worth spending an extra couple of pence on. Quality Salmon is reared according to the highest standards and smoked according to traditional methods.

At Brady’s Fish & Seafood Market, we stock Irish organic smoked salmon from Kinvara, County Galway. This is an award-winning product, perfect for Christmas. We will also be stocking whole sides of Kinvara smoked salmon and gravadlax, which you can order from us too.

Lobster certainly is a decadent dish and Christmas is the perfect time for it. While native lobsters are going out of season in the UK, we can get beautiful live Canadian lobsters. We can cook and dress your lobster, arrange on platters and serve with a choice of homemade mayonnaise, alioli or lemon mayonnaise. It is advisable to order this a week in advance.

King scallops are right in season now and are a great starter for any festive meal. Best cooked by flash-frying quickly on a hot pan, there are plenty of recipes for scallops. Try this simple, but delicious dish!

Add some olive oil to a hot pan and add some roughly sliced quality chorizo for about three to four minutes. Add the scallops and sear each side for approximately. two minutes. Add some butter and tear in some sage leaves and serve a handful of rocket and a squeeze of lemon juice.

Prawn cocktail

Prawn cocktail seems to have fallen out of fashion, but for a lot of people it is very much a part of Christmas fayre as any. Like any great dish, everybody has their own recipe for this, but this is very subjective. In my opinion, as long as you have great quality prawns, fresh produce and a nice Marie Rose sauce, the rest takes care of itself!! We use a combination of smaller tiger prawns for the cocktail and large Black Tiger King prawns to decorate around the cocktail. Prawn cocktail platters can ordered three days in advance.

We would like to wish our customers and the readers a very Happy Christmas and a Prosperous New Year!
