Poached Orange Pears

This recipe can be made a day ahead. Not suitable to freeze. Suitable to microwave.

Ingredients (Serves 4):

4 small ripe pears, peeled
1 orange
3/4 cup fresh orange juice
1/4 cup of castor sugar
1/4 cup of brandy
2 teaspoons of honey
1 tablespoon of brandy, extra
1/3 cup of fresh orange juice, extra

Poached Orange Pears
Method:

Trim base of pears so pears will sit flat. Use vegetable peeler to remove rind from orange, cut rind into fine strips; reserve. Combine juice, sugar and brandy in pan, stir over a low heat until sugar is dissolved. Bring to boil, boil uncovered for 3 minutes. Stand pears upright in orange syrup, cook uncovered for 15 minutes. Remove pears to serving dishes, reserve 1 cup of poaching liquid. Combine reserved poaching liquid with honey in pan, bring to boil, boil uncovered for 3 minutes. Combine extra brandy, extra juice and reserved rind in separate pan, bring to the boil, boil for 2 minutes. Stir orange mixture into poaching liquid; spoon over pears.
