Pork & Apricot Casserole

A delicious casserole served with mashed potato. Try using white wine instead of cider for an alternative.


1 Tbsp plain flour
1⁄4 teaspoon salt
Ground black pepper
750g cubed casserole pork
2 Tbsp vegetable oil
1 red onion, chopped
500ml cider
2 tsp chopped fresh sage
100g dried apricots

Pork & Apricot Casserole

Preheat oven to Gas 3, 170 C. Put flour, salt and pepper into a plastic bag, add the meat cubes and shake well to coat the meat. Heat the oil in a large frying pan and fry the pork in two batches to brown lightly on all sides. Place into the Pyrex casserole dish. Add the onion to the pan and cook for 1-2 minutes, pour in the cider, sage and apricots. Mix well. Bring to the boil and pour over the pork. Cook in the oven for approx. 11/4 hours until the pork is tender. Adjust the seasonings if necessary.
