Mediterranean Topped Salmon
A really tasty dish which is quick and easy to make. Serve with seasonal vegetables or salad.
2 skinless, boneless salmon fillets, approx.
175g each 1 large slice bread (wholemeal or white)
25g olives (stones removed)
25g sundried tomatoes
50g cheddar cheese 1 Tbsp olive oil
1). Preheat the oven to Gas 5, 190 C. Place the salmon into the Pyrex roaster.
2). Put the bread into the processor to make breadcrumbs, add the olives, tomatoes, cheese and olive oil and pulse to chop everything up roughly.
3). Remove and press onto the salmon to form a topping.
4). Cook in the oven for 20 minutes until the fish is cooked through and the topping golden and crisp.
