Grilled fish with coriander sauce

3 medium red chillies
1 tablespoon chopped coriander root
3 cloves of garlic - crushed
2 teaspoons sugar
4 white fish fillets
2 tablespoons oil
1 tablespoon fish sauce
½ chicken stock cube
1/2 cup water
2 teaspoons cornflour
1 tablespoon lime juice

Grilled fish with coriander sauce

Grind chopped chillies, coriander, garlic and sugar to a paste using a pestle and mortar. Brush fish with half the oil, grill, turning once, until just tender. Heat remaing oil in pan, add chilli mixture, cook, stirring, 2 minutes. Stir in the sauce, crumbled stock cube, water and blended cornflour and juice. Stir until mixture boils and thickens. Serve sauce over fish.
