Easy Healthy Carrot Cake
2 cups SR flour
2 cups sugar
2 tsp cinnamon (or maybe a bit more;
1 tsp salt (optional)
1.25 cups vegetable oil
About 1 kilo of grated carrots (you could shred
them in a food processor as it’s easier)
Preheat the oven to 350 degrees.
Grease a loaf tin with oil and flour. Sift all dry ingredients together. Mix in the oil and then the eggs, one at a time. Finally, mix in the carrots. Pour into the tin and bake. Cook for around an hour. The toothpick test will tell you when its done.
This cake also freezes well.
